Challenge
Work with CNTA to explore the potential of coffee silverskin as a new functional ingredient. Coffee silverskin is currently considered a coffee byproduct and has no approved food use. Preliminary technical information will be gathered to serve as the basis for a future application for evaluation and authorization as a novel food ingredient for different applications.
Project results
The project has generated evidence on the variability of coffee silverskin and the potential risks associated with its consumption, a necessary step towards its use as an ingredient.
As this by-product is classified as a novel food under Regulation (EU) 2015/2283, its placing on the market requires authorisation from the European Commission.
The work carried out within the Sandbox identified two key steps before submitting the regulatory dossier to EFSA for assessment: standardising the processes used to obtain the ingredient in order to ensure consistency, and clearly defining its intended uses. These learnings will guide Pascual Innoventures’ next steps towards a future authorisation.
